The Greeks, Romans, Muslims, Normans, Germans, French and Spanish have all battled over this region in the hopes to access its trade ports and flourishing farm lands. With all these different cultures flowing through the country; Southern Italy has become a melting pot of flavors and cuisines from those who have left their mark. However, impoverished by war and drawing from those different cultures, the people of Southern Italy improvised to make their simple dishes elegant, delicious and long lasting. The regions of Calabria, Sicily and Sardinia provide bountiful rich spices including oregano, cumin and fennel as well as an abundance of seafood and lush vegetables that make the whole of their dishes.
